I know it isn’t technically Summer yet but the lovely bright mornings we have been having inspire me to change things up a little bit at breakfast time.
I always associate lighter foods with Summer, salads and fruit, rather than heavy, hot meals.
No matter what the season though I can never eat breakfast first thing, it has got to be about 9 or 10 AM before I can think about food which is great because the girls are in school so I have a bit of time but obviously still have little Jasper at home so can’t be taking too long concocting in the kitchen.
When it is just me and J I tend to just make a slightly bigger portion and we will share the one plate, as he is still wobbly with cutlery and a hit and miss eater this works out fab as it means he stays fairly clean with me feeding him and when he sees me eating he obviously wants to have some too.
So here are my five breakfast ideas you can try!
This lovely little recipe comes from Niki at Play and Learn Every Day. I love the idea of a breakfast cake and I know it would go down well with the kids! I think they would be gorgeous decorated with some fruit (if you have oodles of time!)
Sticking with the ‘cake’ theme, Ali at Mum in a nutshell came up with these cute little muffins. So yummy. In another life I used to have a blueberry muffin for breakfast every day fresh from the bakery (and still couldn’t tip the scales at more than 8 stone, what a witch!) but these look much more kind to your (my) body!
Lucinda from Bakes, Books and My Boys has a divine looking recipe for a twist on the traditional dessert. I LOVE trifle. Love love love so this is definitely one for me to have a go with, maybe on the weekend though when I have no school run time restrictions.
I love Flapjack but am aware in all its sugary glory it isn’t ideal to be eating all the damn day. I can’t wait to try this sugar free alternative from Alison at Anniebobs . This will be nice and light during those summer months and fantastic for kids like mine that are always on the go. Shove a bit in their hand and push them out the door, just like the old days hey!
My absolute favourite at the moment is simple yogurt and granola, so quick and easy and super tasty. I am going to make my own granola this week instead of using the fruit and nut one from Aldi, as yummy as it is!
